What you’ll need

  • 1½ cups basmati rice, rinsed and soaked for 20 minutes
  • 500 g boneless chicken thighs, cut into large pieces
  • ½ cup plain yogurt
  • 1 tbsp ginger-garlic paste
  • 2 tbsp ghee or neutral oil
  • 1 medium tomato, chopped
  • 2 tsp biryani masala
  • ½ tsp turmeric
  • ½–1 tsp chilli powder, to taste
  • 1 bay leaf, 3 green cardamom pods and 1 small cinnamon stick
  • ¼ cup chopped mint and coriander
  • A pinch of saffron soaked in 2 tbsp warm milk (optional)
  • 8 tbsp Queen’s Premium Original crispy onions, divided
  • Salt, to taste

Let’s make it

  1. Mix the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, chilli powder, 2 tbsp crispy onions and ½ tsp salt. Marinate for at least 20 minutes while preparing the rice.
  2. Bring a large pot of salted water to a boil with the bay leaf, cardamom and cinnamon. Add soaked, drained rice and boil until about 70% cooked: the outside is tender but the centre still has a firm bite, usually 5–7 minutes. Drain immediately.
  3. Heat the ghee in a heavy, lidded pot. Cook the tomato for 3–4 minutes, then add the chicken and its marinade. Simmer for 12–15 minutes, stirring, until the chicken is cooked through and the sauce is thick enough to coat it.
  4. Spread the chicken evenly in the pot. Layer the rice over it with the mint, coriander and 4 tbsp crispy onions. Drizzle with the saffron milk, if using, and 2–3 tbsp water.
  5. Cover tightly and cook over the lowest heat for 18–20 minutes. Check that the chicken reaches 74°C at the centre. Remove from the heat and rest, covered, for 10 minutes.
  6. Gently lift the rice and chicken together without crushing the grains. Sprinkle with the remaining 2 tbsp crispy onions just before serving, and serve with cucumber raita.
